NOTE: I'm not big on following recipes....I'm the queen of dump cooking
Miracle Soup (erm...it's a miracle that everyone likes it, that is.....)
In crock pot:
semi cooked frozen white beans (canned or freshly cooked would work as well),
chicken breast or other poultry chunks,
jar of salsa,
can of corn (optional),
frozen pureed carrots or sweet potatoes (optional),
If you need more fluid, add tomato juice/V8
shred chicken before serving
Serve with sour cream, shredded cheese, avacado slices, chopped onion, black olive slices, etc...and baked/fried tortilla strips if you wish
Day 2: add spinach, black beans (any other variety of beans or lentils, I prefer soy or red lentils) and corn, roll in tortillas, cover with sauce of some sort and cheese and bake....and the pureed carrots slipped right past my freaks.

This sounds so yummy, Dawn! And I love the next day additions to fool the family from leftovers! :)
I have done a whole chicken in the crock pot. Perfect for "shedding' chicken-which is different from juicy cooked fast kind of chicken. Easiest to let it cool for a long while before even trying to get all the meat off. And of course, save all the juices-cool to let the fat rise- skim off. Free chicken broth. (I spent a good 12 years throwing away all that free chicken broth!)
